Distillery prides itself on being an ethical and sustainable producer and marketer of craft spirits. Sustainability is at their core and influences how they run their business in every way. Our distillery is powered by the Australian sun through a 30kw array of solar panels on the roof. The power runs down cables to run their pumps, mixers, boilers and chillers that produce our range of spirits. When they are not using the power, it is fed back into the grid. The distillery is designed with energy efficiency features in mind: they use the heat generated by the distilling process to boil the water for mashing. Ways to minimise, reuse and recycle waste are always on their mind. They aim to avoid waste to landfill. They play their part by forming relationships with external parties who helps provide them with sustainable alternatives. Notable examples of this are: All their spent grain from mashing is picked up by a local farmer and used as cattle feed. Their heads and tails from gin distillation, normally waste streams, are sent back to their neutral spirits supplier where they efficiently recycle the stream back into fresh alcohol. Limoncello production uses only the outer pith of the lemon, leaving the main lemon body as waste. They have partnered with a local fruit juice company who now takes the peeled lemons and uses them for juice. Their bottle is so beautiful and deserves not to be thrown away. At the distillery they have their recycling fish Juno which their customers can use to refill there bottle and get a $10 discount to boot! They convert their used bottles into beautiful rock glasses and candle holders, providing them with an ongoing life. Manly Spirits is renowned for the use of foraged botanicals. They collect these themselves and ensure that they harvest sustainably by carefully grazing over large areas to reduce impact. When the seasons cause their ingredients to become scarce they source from other parts of Australia where they are plentiful.
